Heh...I wish I had to cut back only that much! Seriously, though, hope

I don't think storage is a problem in terms of microbial danger. If
anything, adding vit C would preserve the existing product better rather
than worse. However, the vitamin C itself may not last long as such once
dissolved.
Even ascorbic acid powders may be prepared & packed in such a way that
they're mostly oxidized by the time you get them. I don't know how
effective the vit C in the product you were buying was, but my only concern
with your making your own is that ascorbic acid can sting a bit. It's not
that strong an acid, but if not well diluted I've heard it can irritate.
